Are you having problems with your current food, or what is motivating you to change it?

Marshall's is not my favorite food, but I know plenty of healthy, old ferrets that have been eating it all their lives.

You can certainly make your own food, but you need to make sure that you get them all of the balanced nutrition that they need. Just feeding straight meat isn't enough. If they were eating prey that they caught, it wouldn't be all muscle, after all. They need the calcium, phosphorus, taurine, and all of the rest. Just make sure that you really do it right, or else it's easy to come up with food made from premium ingredients that isn't as healthy as a good kibble.

For my oldsters that need a bit more energy or aren't interested in hard food, I do make a chicken soup, but I use the WHOLE chicken, or at least as much as you get from the store - organs, bones (Well cooked, and ground up so no dangerous shards remain), skin, fat, and all. Even then, I supplement with a mixture that my vet came up with, containing Omega oils, vitamin E, Taurine, and some other things.
